I wondered whether it was cheating to write a recipe for fruit salad.
But sometimes I think we need reminding that they are in fact really tasty! (I definitely do, if its not covered in chocolate I rarely want to hear about it).
So this is just to inspire some fruit love. Something for that New Year health kick your doing.

I have added a light caramel orange sauce, but this is optional. If you want to be super healthy (boring) then don’t add it. Otherwise it adds a richness and extra sweetness to bring together all the fruit flavours.

Fruit Salad:

4 clementines 

2 Persimmons

1 Pomegranate  

Caramel Sauce (optional):

200g caster sugar

125ml water

30ml orange juice

10ml Cointreau 

Peel your clementines and break them apart into segments.
Slice the Persimmons into thin circles. They have a beautiful pattern running through the centre! Added treats.
Throw both together in a large bowl.
Lightly bash the pomegranate with a rolling pin; this loosens the seeds so they fall out much easier. Cut it in half and sprinkle the little red jewels over your prepared fruit.

To make your sauce, bring the water and caster sugar to the boil and leave until all the sugar has dissolved and it turns a nice golden colour. Remove from the heat and whisk in the orange juice and Cointreau (add according to taste really…).
Leave to cool.

Pour over your fruit, serve and enjoy.
